Spicy Garlic & Herb Chickpea Salad
I N G R E D I E N T S ´ 1 cup dried chickpeas (1 clove garlic, 1 bay leaf, if using dried) or 2 cans ´ 1 large clove garlic or 2 small (minced) ´ 1 large scallion (sliced) ´ 1 cup parsley (chopped)
STEPS *If using dried chickpeas, cover with water and 1 tsp baking soda, let sit overnight. Next day, drain, add to saucepot and cover with water and 1 tsp baking soda, 1 clove garlic, 1 bay leaf. Simmer until tender (30-45 minutes). 1. Add all ingredients, except salt and pepper, to mixing bowl. 2. Stir to combine. 3. Add salt and pepper to taste. 4. Chill for one hour before serving.
