Roasted Garlic Guacamole

I N G R E D I E N T S ´ 2 unpeeled garlic cloves, pan-roasted ´ 4 avocados ´ 1 lime, juiced ´ 1/2white or red onion, diced ´ 1 Roma tomato, diced ´ 1 cup cilantro, finely chopped ´ 1/2 tsp ground cumin ´ 1/2 tsp salt

STEPS 1. Place the unpeeled garlic cloves in a pan, switch on to medium heat—continue to check on the cloves and shake the pan until the skin is blackened while prepping other ingredients—about 10-15 minutes. 2. Use a butter knife to halve each avocado vertically. Remove and discard the pit. Use a spoon to scoop the avocado insides into a large bowl and discard the peels. 3. Add lime juice into the bowl, stirring to incorporate. 4. Dice the onion and tomato and finely chop the cilantro—fold into the bowl along with the cumin and salt.

5. Carefully remove garlic cloves from pan and turn off the heat, then crush the cloves with the flat part of a knife to easily remove the skin. 6. Mash the roasted garlic into a paste with a fork and add directly into the guacamole and stir well until desired consistency—adjust salt and cumin to taste. 7. Serve same-day with chips and enjoy!

Brief description: Between recipes frommy family, my wife’s family, reading cookbooks and living in the Southwest, I have an appreciation for guacamole. The avocado canvas welcomes a myriad of potential flavors on which to build the perfect guacamole. I created this particular recipe for a 2019 guacamole contest in Scottsdale, AZ and won first prize. Secrets to this simple recipe include notes added by sweet, mild pan-roasted garlic and warm, earthy cumin. My wife and I love bringing this dish to parties, but it doesn’t last long! GENERAL Est.
